Good morning! Sometimes at the beginning of the week I have a hard time motivating myself to get anything done. Mondays are especially hard because after the exciting weekend, facing another week of the “same old, same old” is a struggle. So on Mondays, I’ve been trying to do some bulk cooking to give myself some motivation for the week to come. Today the kids and I made homemade tortilla shells. I’ve made them once before and they are surprisingly easy to make and VERY filling. My husband and I can only eat one during a meal, which means they stretch further. They freeze well so I made a whole bunch, so we are stocked up for a while. I will share the recipe below if you want to give them a try!
Tortilla Shells (6-8 medium shells)
2 cups all purpose flour
1 tsp. salt
1 tsp. baking powder
4 tbsp. melted butter
3/4 cup warm water
Add the flour, salt and baking powder to a bowl and mix well. Add the melted butter to the mixture and begin to mix with your hands. While mixing, add the warm water. Continue to mix until a soft dough forms. Place dough on a floured surface and knead for 4-5 minutes. Separate into 6-8 pieces. Roll each piece out flat with a rolling pin. (You will need to make them very thin! I know it will look too thin at first but trust me they will bubble up in the pan and get thicker.) Heat a pan or skillet over medium heat and add some butter or baking spray. Cook each tortilla for one minute on each side until golden brown. Enjoy!😊
